Lamb or Kid with Stamnagathi


1kg of stamnagathi (a kind of chicory)
1 kg of lamb or kid cut into small pieces
1 water glass of olive oil
1 wine glass of white wine
1 onion, finely chopped
Juice of 2 lemons
1 tablespoon of flour
Salt, Pepper


Clean and wash the greens well. Heat the olive oil and sauté the onion with the meat over medium heat for 5 minutes. Add the wine, season with salt and pepper and add the water. Cover the pot and allow our food to boil for about 30 minutes. After 30 minutes add the stamnagathi, stir and cover the pot. Let our food to simmer for 20 more minutes. Stir the lemon juice with the flour and add it in the food, stirring continuously for 5 more minutes. Serve the food warm with its delicious sauce.
