Snails with pligouri


1 kg of pligouri
1/2 kilo of snails
1 onion
1 cup of olive oil
1 garlic clove
¾ of grated tomato
Salt, Pepper


In a saucepan chop the onion and sauté it lightly in olive oil. Add the snails (after having them boiled and well washed) and sauté them. With a spoon remove them trying not to get the onion. Add the grated tomatoes, some water and allow to boil over low heat. Ten minutes is enough because it boils again with all the remaining ingredients. Add the water and when it boils, slowly add the pligouri (one cup of pligouri, three cups of water). Stir, add salt and allow to boil over low heat.
