Skioufichta or sioufichta Macaroni
Skioufichta or sioufichta Macaroni is Cretan Pasta made from flour, water, olive oil (in the shape of boats !!!!!!!!) Skioufizo means stroufizo, in other words roll and knead.
Ingredients for the dough:
600-700 grams of wheat flour
1 cup of olive oil
3 cups of water
1 teaspoon of salt
Grated anthotiro cheese
Fresh butter or Cretan stacovoutiro
Preparation
Knead the flour with the water, the salt and the olive oil. Leave the dough for one hour and then make the macaroni. Mold the dough into finger-sized strips and cut it in small pieces (about 3 cm long). Then put a finger in the middle of each piece and on a wooden floured surface form a short and fat macaroni (like a small boat) empty in the middle. Boil them in plenty of water with a little bit of olive oil and salt for approximately half an hour, having sieved them first. Serve them with cheese or anthotiro cheese and if you like pour hot butter or preferably the Cretan “stacovoutiro”.
